It has been so hot here in Connecticut. Today was a relief from the heat, but a few days ago I was looking for an effervescent drink to quench my thirst. Coke was really mouth watering but it’s so full of empty calories ...
This did the trick.
I bought a bottle of seltzer water and I had some blueberries and lemons and put them together. I also made a blueberry syrup so I could get some flavor in the seltzer and also some sweetening.

MY BLUEBERRY SYRUP
1 pint blueberries
4 cups water
1/3 or 1/2 cup sugar or honey (I don’t even put that much sugar in – I don’t like things super sweet). If you like it sweeter, go for it.
Simmer for 10 minutes. ENJOY!
I also made some popsicles with this stuff. Perfect coolers..

I poured seltzer water in a glass, added some blueberries, ice, and a little of the blueberry syrup – 2 tablespoons or so. Squeeze in some lemon.
It looks so pretty, doesn’t it? It tastes wonderful AND it’s thirst quenching.
Then the lemon fell in.. and this happened...
And you know what? I just went with it.

DeleteI buy canned club soda instead of seltzer for these drinks. That way I can use what I need without a large amount going flat.
