French Toast Breakfast Parfait with Greek Yogurt`

Healthy breakfast parfait – French toast and Greek yogurt with honey sweetener and fresh strawberries and bananas.

I had several of the grands (5 to be exact – it was hopping over here) overnight last night and I was asked to make French toast this morning which I did.

I made French toast for my youngest (son who is 26 now) every morning for years and years. I can make it in my sleep!

Anyway, we had some French toast left over and I had an idea! Wouldn’t it be fun to let the kids cut up the leftover French toast into bite sized pieces and let them make a parfait out of them?

So I took out some plain Greek yogurt and sweetened it with honey (2 tablespoons honey to 1 cup yogurt).

I had some nice parfait glasses that I let them use (it’s always more fun to make food in pretty dishes, isn’t it?).

Here Faith is cutting up the French toast.

View from the top. She put some blueberry syrup on the top and make a pretty design. Nice work.

They had such fun...

Sometime when you decide to make French toast, you could go a step further and make breakfast parfaits!! Or let everyone make their own!
