Candied Bacon - Pumpkin Latte Flavor
It's no secret that now I am a Pumpkin Latte "fan"... big time. That is one wonderful flavor!!
I made a pumpkin latte a few weeks ago and I was thrilled with how it came out and how easy it was.
So.... as I was cruising around looking for inspiration I saw candied BACON, yes BACON. I really didn't care for the hard candy coating over the bacon and I wondered if it could be turned into pumpkin latte flavored bacon. Wow. Yes, it can.. nicely and fairly easily. The hardest part is cooking the bacon before you start and not eating it right up, then and there. I love bacon.
Pumpkin Latte Candied Bacon
1 package center cut bacon, cooked (I cooked mine in the microwave until it was crisp)
Ingredients:
1/4 cup strong coffee
1/2 cup milk
2 tablespoons cooked pumpkin (canned)
1/4 teaspoon Pumpkin Pie Spice
2 tablespoons sugar
1 tsp. vanilla extract
Put milk, pumpkin, sugar, pumpkin pie spice and vanilla extract in a bowl. Cover with plastic wrap and make a small hole in the plastic for venting. Heat for 1 to 2 minutes until the milk is hot. Stir in the coffee.
Place the bacon on a cookie sheet that has sides and pour the pumpkin latte mixture over the bacon. Turn the bacon over until all sides are covered with the liquid. Bake in oven 350 degrees for 10-15 minutes. Turn the bacon over and cook another 5 or 10 minutes. I left mine in a little too long so keep a watch that it doesn't burn.
Keep wrapped in plastic and keep refrigerated until ready to eat.
Keep warm, people, and get ready for gobble gobble day!
