Eggs in a Basket for Breakfast

I’ve been making “Eggs in a Basket” forever! One day I was making them for my granddaughter, son, and husband and decided to take a picture of them and do a post about them so here it is.

Okay, here goes. This is not a fancy recipe, but it’s tasty.

I remember loving these as a child and it’s fun to make them for my family now. I use an egg for each piece of bread. I like to use Italian bread of some kind because it tastes and looks better. I take a piece of bread and make a hole in the bread about 1 1/2 inch or a little more. I don’t use the whole white of the egg. My family doesn’t like all that egg white on the bread so I use 1/2 of the egg white and the whole yoke on each piece of bread.
After I make the hole in the bread I butter one side of the bread and put that side down on the frying pan. First heat up the frying pan. Then I crack an egg and let out 1/2 of the white. (If you want to keep the whites you could probably use  them for something else). Then I spread the egg around the bread so that it covers the entire slice of bread.

When the first side is browned and crispy, I lift up the bread and hold it with a spatula while I throw some butter in the pan. When it melts I flip the bread over.

Then I cook the 2nd side until it’s browned and crispy.

Whenever I make this for weekend breakfasts, I get huge rave reviews.Here they are, all ready to eat!

These are very much easier to make than pancakes. Less messy, too.
Here is an update on the Texas dog….My granddaughter named her Angel but a few weeks ago we saw her hopping around like a bunny and we decided to call her Bunny. Right now she’s Angel Bunny.

She’s doing great! She knows the routine now, when we go to bed (late) and when we eat, and when we go for a walk. She likes that best. She’s getting along with our older dog, Minnie, too, and Minnie is tolerating her. :) See the post Three Southern Dogs, One Happy Family to read about how we adopted three dogs from the South.
