The Recipe:
Melt 1/4 cup butter in saucepan and saute 1 onion (chopped) until transparent.
Stir in 1/8 cup flour and 1 tsp. salt and stir for 1 minute. Add 3 cups of milk. Simmer.
Add 8 oz of uncooked macaroni.
Simmer for 8 minutes. It will thicken as it cooks.
Slice 1 1/2 cups sharp cheddar cheese thinly.
Remove macaroni mixture from heat. Add cheese. Stir until cheese is melted.
Add drained, medium sized can of diced tomatoes (not the small can).
Stir:
Turn into a casserole dish if desired and you could also top with either cubes of bread and/or more cheese and bake a few minutes until cheese is melted and bread is crunchy.
