AND SINCE YOU DON’T NEED PECTIN you can make it whenever you have a pint of blueberries!!
This recipe uses honey for the sweetener so it’s healthier – since I’ve gotten into researching about honey, I like using it instead of sugar where I can because of the health benefits.
All the recipes I’ve seen on the net call for 3 cups of blueberries but I wanted a recipe that uses the pint container of blueberries so that I wouldn’t have to measure. I had my neighbor, Elaine, with me that night and I know she teaches math so I asked her to cut the recipe down using 2 cups of blueberries instead of 3. Here are the results of her calculations. Thanks, Elaine. The jam came out great. I gave Elaine some to take home and she had high praise for it the next day.
“It’s so fresh and delicious tasting.” I can’t remember everything she said about the jam but she went on and on about it.
It’s really good and it’s really easy. Here’s the recipe!
BLUEBERRY JAM OR COMPOTE
1 pint blueberries – (2 cups)
1/2 c. honey
1 and 1/3 TBSP lemon juice
Almost 1 teaspoon of lemon zest
That’s it. Put all ingredients in a pan, bring it to a boil, and simmer for 20 minutes if you want it runny like compote. If you want to turn it into jam add another 10 or 15 minutes. Stir occasionally.
This recipe produces 2 – 4 ounce jars of blueberry jam with about 2 tablespoons left over.
You can sterilize the jars if you like but I didn’t since I’ll be using these 2 small jars within a few weeks so I just put them in the refrigerator.

This was so awesome to make, too. It was no work. I didn’t even have to stir it much. It just bubbled gently for about 30 minutes while we played Scrabble. (Mom won!)

ReplyDeletePerfect! I was looking for an easy recipe and, BONUS, no refined sugar! I multiplied the amounts by 5 since my family and i had just gone blueberry picking and it turned out beautifully. I now have 4 1/2 pints of delicious Blueberry Jelly. Thank you!
