Two things: I’d like to do some posts on grilling because I can hardly wait to get out and do some grilling myself. It means that summer is on the way!!! Yay!!
And two: My husband’s doctor said he should go on a Mediterranean diet due to health issues. I thought I could put these two things together and post about them once a week.
Mediterranean Diet:
Here is the Mediterranean Diet Pyramid from Oldways.org. Old Ways is a health source using the “old ways” to get good health and well being. (I am getting NO compensation for this. I just wanted to give credit for the pretty pyramid picture. :)Grilling: I love salmon. I eat salmon several times a week both canned and fresh and grilled salmon is the best!!
Grilled Salmon with Dill Sauce and a side of cantaloupe
I grilled the salmon only a few minutes – Less than 10 minutes, both sides.
Dill Sauce Recipe:
1/2 cup low fat sour cream
1 tsp. of freeze dried dill
1 TBSP of low fat milk to think out the sour cream
salt and pepper
Mix all together. Put on grilled salmon. Consume.
Now for the Mediterranean part:
Red and yellow sweet peppers on a bed of fresh baby spinach with a sprinkling of Feta cheese, olive oil and cider vinegar. The Feta cheese is so flavorful!
The best part is that Hubs loved it! I did, too. This Mediterranean diet thing is going to work out okay, I think. I was a little worried about switching to this diet, but it’s actually pretty tasty and easy to prepare and satisfying. I feel like I’m doing something healthy for us, too.
