Recipe for Apple Pie Streusel Cake
6 to 7 apples, peeled, cored and shredded
1/2 cup sugar
1/2 teaspoon cinnamon
1 stick of butter
1/3 cup sugar
1 whole egg
1 egg yolk
1 1/2 rounded teaspoons of baking powder
2 cups flour
Cook apples, sugar,and cinnamon on stove until softened, about 10 minutes. Set aside.
Cream together butter and sugar. Add the eggs. Mix well.
Add the baking powder to the flour and put in bowl with the butter, sugar, egg mixture. Mix together with your hands until the batter forms crumbles.
Spray Pam in an 8" Springform pan. Add a tablespoon or 2 of plain bread crumbs and roll it around in the pan.This makes a really pretty outside of the cake..
Place 3/4 of the batter in the Springform pan. Add the cooked apples and finish with a topping of the batter, leaving the crumbles on the top.
Bake at 350 degrees for 45 minutes. If the top starts to get too brown cover lightly with a piece of tinfoil. Remove the sides of the Springform pan. Can be served with caramel sauce.
